Sweet Potato Greens


Choose the tips of the sweet potato plant, (3 – 4 inches)


Place the tips in salted water for about an hour.


Empty the water and add:


1 Tomato, peeled, deseeded and chopped
2 Green onions, chopped
1 T Ginger, grated


Drizzled with


2 T Olive oil


Saute until ingredients are wilted. Serve as a side vegetable dish.

Note: Sweet potato greens are low in saturated fat and sodium and very low in cholesterol. It is also a good source of protein, niacin, calcium and iron, and a very good source of dietary fibre, Vitamin A, Vitamin C, Thiamin, Riboflavin, Vitamin B6, Folate, Magnesium, Phosphorus, Potassium and Manganese.


Sweet potato greens have similar nutritional value as asparagus.
